Kellogg’s recently announced a new version of the famous cereal, Rice Krispies® Gluten Free.

June 16th, 2011

Almost everyone remembers having Rice Krispies when they were a child. Soon, children who suffer from gluten sensitivity will be able to enjoy the classic snap, crackle and pop in the morning as well.

Kellogg’s recently announced a new version of the famous cereal, Rice Krispies® Gluten Free.

According to the Rice Krispies Facebook page, the new cereal has already begun to ship out, so you should see it at your local grocery store soon.

“We heard the strong desire from people within the gluten-free community, especially parents, for more affordable foods that they can serve their families, and we are helping to fill that need,” said Doug VanDeVelde, senior vice president of marketing and innovation at Kellogg’s.

The new version of the cereal will replace the wheat barley with whole grain brown rice.

The cereal will be produced in a separate facility that has been making gluten-free products for nearly a decade. Kellogg’s has guaranteed that each batch of cereal will be tested to ensure it is gluten free.

Is Gluten Sensitivity Keeping You Fat?

June 14th, 2011

Is Gluten Sensitivity Keeping You Fat?

The problem with many weight loss systems is that they cater to the masses without considering individual need.  They use a “one size fits all” approach.  This approach works for some but leaves many to ponder why the weight will not come off the way it used to.

Most diet plans are based on Calorie consumption.  Not enough thought is given to the quality of the Calories being consumed.  For example, there are a number of companies that provide Calorie controlled meals.  This concept works well for portion control; however, the quality of the food being used is poor and as the age old adage goes – “You are what you eat.”  Chemicals, radiated foods, ultra pasteurization, processing, lack of nutrient density, genetically modified foods, cloned meats, unidentified food intolerances, etc. all taint many of these so called “healthy foods”.  Many of these factors can cause internal inflammation when ingested leading to an increased risk for cancer, heart disease, diabetes, weight gain and more.

As if that were not bad enough, weight loss is not just about Calories.  The concept of the Calorie is based on the amount of heat a food generates when it is burned in a sealed chamber.  Although Calorie estimation can be useful, it does not take into consideration the affect that food can have on hormone levels.  To make things even more confusing, different foods can affect people’s hormones differently (see the example in the paragraph below).

Gluten Sensitivity Disrupts Weight Loss By Effecting Hormones

Many people do not tolerate gluten (a protein found in grains).  For these individuals, gluten causes excessive insulin production which in turn tells the body to store fat.  This can happen even if the individual is not “over eating” on Calories.  Additionally, gluten can cause the body to over produce cortisol.  This powerful hormone can also cause excessive bloating and weight gain.  Gluten has also been shown to cause thyroid hormone deficiencies.  Because the thyroid gland regulates the body’s metabolism, a deficiency in this powerful hormone can cause a lack of energy, hair loss, dry skin, clouded thinking, and weight gain.

Common Sense Applies

People are different and unique.  No one diet is right for everyone.  The same can be said for exercise.  No one program is right for everyone.  If you are having problems with weight loss, know what your options are.  You might not be responding for a number of different reasons.  Specialized genetic and laboratory testing can help you identify gluten and other food intolerances.  Put the odds in your favor before you get frustrated with a lack of progress.

Gluten-Free at CITI FIELD & Mets To Host Celiac Awareness Night At Citi Field

NEW YORK (CBSNewYork) – Researchers believe that as many as 1 in 100 Americans have celiac disease. Many of them, however, may not even be aware of it.

On Friday evening, one of New York’s baseball teams is doing their part to help. The Mets will host Celiac Disease Awareness Night at Citi Field during their matchup with the division rival Philadelphia Phillies.

“I think one of the biggest things is just the awareness of it, just people knowing that they have it,” SNY reporter Kevin Burkhardt, who was diagnosed with celiac disease about 10 years ago, told 1010 WINS.

Burkhardt said he had never heard of celiac disease before he was diagnosed with it after getting sick and losing 30 pounds in a month.

1010 WINS’ Alice Stockton-Rossini with Kevin Burkhardt

Burkhardt  is urging baseball fans with celiac disease – – which prevents people from digesting gluten, a protein in foods like bread, crackers, and pasta – – to come down to the ballpark for the game.

Celiac disease increases chances of developing autoimmune diseases, osteoporosis, thyroid disease and some cancers. The only known treatment for celiac disease is a complete gluten-free diet.

Special sections for people with celiac, their families, friends and anyone else who wants to support the cause have been set aside at the stadium for the game.

“We’re gonna have a special gluten-free concession stand right behind our section in left field,” Burkhardt said. “You’ll have the comfort of knowing you can come out, there’s plenty of food for you to eat and you don’t have to worry about getting sick.”

That’s a comfort Mets fans with Celiac Disease have every night. Citi Field is one of the few professional sports venues that has a permanent concession stand serving gluten-free food.

The stand makes finding a place to eat one less thing for Burkhardt to think about while he’s running around the park.

He also thinks it’s a one less thing for Mets fans with Celiac Disease to worry about these days.

“You can have a hot dog and a beer and have a normal night at a game…which is kinda nice.”

Portions of ticket sales from the game will go to support the Celiac kids charity R.O.C.K. Long Island and the National Foundation for Celiac Awareness.

Elisabeth Hasselbeck, who also suffers from the disease, will be honored before the game for her contributions to the cause.

Kosher Parve Gluten-Free

Kosher Certification

Kosher Supervision by CupK

Last month I was at The Great American Health Bar (Located at 35 West 57th Street Between 5th and 6th Avenues in New York City), enjoying a lovely coffee break with friends Steve Sabaugh, Jackie Mason and Rabbi Shmuley Boteach, when the topic of my Carr’s Gluten-Free came up. We needed a separate Gluten-Free Kitchen with Kosher Supervision and that’s when Bubby Ruth’s Bakery was created. Rabbi Shmuley told me about Rabbi Steinberg’s CupK ,  how wonderful and reasonable they were. So under Rabbi Shmuley’s and Jakie’s advice I sought out CupK and now proudly  enjoy their Supervision. מזל טוב

When The Perfect Image Matters

April 19th, 2011
Luxury Chocolate Art

Create your own chocolate art from photos or have us create a designer logo or theme when the perfect image matters

Can You Create a Specialty  Logos for my Event?
Yes – We will need to know what  kind  image you are wanting designed for your event.  Please send a JPEG of your theme. Creating a Designer Logo for your Confection requires a 2-week minimum lead time before shipping. If you will need your Designer Confections shipped to you earlier, a $25 rush fee will apply to orders under $250 and a 10% rush fee applies to orders of over $250.

Do you manufacture your own products?
We produce most of our products from our 20,000 square foot, state-of-the-art facility in Long Island, New York.  That’s right, proudly made in the USA!  Occasionally we will partner with a quality manufacturer offering products that complement our unique line.  These relationships are under the strictest guidelines and supervision.

Is this like printing on cakes?
The idea is similar, but the technology is completely different.  Images are sometimes put on cakes and cookies by first printing on rice paper and applying the rice paper onto the product.  Through the magic of Chocolography tm, we print directly onto the confection surface.  This creates incredibly vivid, high-resolution images that taste a whole lot better than rice paper!

Do you print your images on rice paper?
Absolutely not!  Why anyone would want to eat rice paper is beyond me… We actually reproduce our delicious edible images directly on the surface of our delicious confections using our special techniques.  Therefore, our pictures really do taste as good as they look!

What do you use to create the actual image on your products?
We use specially formulated FDA approved food colorings to produce our edible images.  They are 100% safe to eat and enjoy!

How do you achieve such great quality images?
We use our state-of- the-art patented technology to achieve the best quality reproductions possible.  The image is literally reproduced directly onto the confection surface in vibrant full color using FDA approved food colorings.

What can I do to insure my design looks good?
The quality of the picture depends on the quality of the image you provide.  The clearer the photo and the more contrast within the photo, the better it will look on the chocolate.  We recommend preparing your image with white backgrounds and large, legible fonts using colors that won’t blend with your background or image.  Keep important text and design elements from the edge of your chocolate, as images can shift slightly in production.  In order to have a higher quality image, you should save your images at 300 dpi (dots per inch) and at approximately 3” diameter.  However, we will resize your image to fit your choice of product.

What are the best photos to use?
The best photos for use on our products are ones that have clear images, good lighting (not too dark), and display the people or subject relatively close up.

Do I have to submit a round photograph?
No, our easy to use design studio provides the ability to crop the image into a circle, rectangle or any other shape that corresponds to the item you selected.  You can then zoom in/out, rotate your image and even add text.

Does the photograph I submit have to be the same size as the picture on the product?
No, we will resize your design to fit the item you selected.  Keep in mind if the subject of the photograph is very small or the quality of the photograph is poor, it may not be very clear when enlarged.

Is it difficult to use the design studio?
No, in fact it’s as easy as 1 2 3!  We developed our design studio to make it easy for anyone to design their own custom image.  You simply select your item from the shopping cart and click “create your design”.  Your item will then appear in the design studio where you will then have the ability to upload your image which is then placed on your item.  You will also be able to crop, zoom and rotate the design within the item.  If you like, you can even add text using a variety of fonts and colors.  Once you are satisfied with the design, you will press “save” and you are ready to checkout!

Do I have to create my design with the design studio?
No, if you have the skills, you can create your entire design in Photoshop or any other photo editing program.  Once you have saved your design, you can still use our design studio to upload and position it on your item of choice for your order.

What types of images won’t work?
Photos that are blurry, very dark, or very small will not produce quality results.  Try to stick with good quality, high resolution images that are saved at 300dpi.
Note:  In the event we find the design you submitted to be of sub-standard quality, we will contact you by phone or email to give you the opportunity to correct the image.  If you choose to continue anyway, you will be asked to submit a “print quality waiver form”.

Do I have to upload my picture or can I send it in the Mail?
You may send a hard copy of a picture in the mail, but you need to include your order information on the back of the photograph so that we know whose picture it is.  We will send the photograph back along with your order unless otherwise instructed.

Do you color match images?
We make every effort to reproduce your image as close as possible and can usually get very close.  However, due to the nature of food coloring, we cannot guarantee an exact color match.

Can I use images in magazines or from the internet to create a chocolate?
No, you must have permission to use any photograph that is sent to us for your custom order.  Typically, photographs of this type are copyrighted and copyright laws prohibit us from using the photograph.

Do the images on the product fade?
When kept from direct sunlight our images will last well over a year.

How do I know they will be fresh?
We sell our products as fast as we can make them and so we are confident they will be fresh when you receive them.

What is the shelf-life?
The shelf life of the chocolate is well over a year.

How do you prevent your products from breaking?
We package your order in our specially designed boxes with foam liners to absorb shock in transit.  This keeps our breakage to a very low minimum.  However, in the rare event that product arrives broken, we will credit you back the cost of the product or ship replacements at your request.

What shipping options do you offer?
Chocolate almost always requires some special handling and expedited shipping.  It might feel cool in your area but your package could pass through a warm climate to get to you.  In many cases packages can spend an entire day in a hot delivery truck if shipped by standard ground.  Therefore we use any number of techniques to insure your beautiful Delicada product arrives in perfect condition.  These methods might include one or more packaging formats such as foam, insulated liners, ice packs and double boxes, which in fact, are reusable.  Although there is a small handling charge for chocolate, it’s well worth it.

How much time does it take to receive an order?
We generally ship orders within two business days.  All products are shipped from our factory in Long Island, New York.  Depending on your location, you should allow at least 2 days for delivery.  West coast orders usually take 5 business days to arrive from the day they are shipped.  Should you have a special time constraint, please note it on the order form and we will do our best to get your order out in time.

Where do you ship from?
Our factory is located in New York.

What if I need help?
Call us … We are always happy to assist you.

How do you ship chocolate in hot weather?
Just like other chocolate manufacturers, we have special heat-protective packaging.

Gluten Free Celebrities

April 13th, 2011

Three Lovely Ladies Who Have Gone Gluten Free

Last week we discussed why going gluten free even if you don’t have Celiac’s disease is a great way to stay healthy, and here are three celebrities who maintain a gluten-free diet for one reason or another — and look great!

gluten free  Victoria Beckham,  Juliette Lewis, Goldie Hawn
Okay, to be fair, she probably looked pretty fabulous even before downing gluten-free cookies, but it probably hasn’t hurt. Here she is looking like a rock star with her tiny soccer-playing son. Soccer moms of the world, take notes!
Juliette Lewis has been starring in movies like What’s Eating Gilbert Grape and The Other Sister for over 20 years, and she’s looked great the whole time. Lewis, unlike Beckham, has Celiac’s, and while naturally the disease is no laughing matter, it hasn’t hurt her ability to stay in prime shape.
Ms. Hawn, like Lewis, has Celiac’s disease, so she’s probably been patronizing gluten free bakeries for some time now. This is an older photo of her, but at 65 she’s still looking pretty good. Definitely not like your typical grandma, which she’s due to be in about 9 months once daughter Kate Hudson has her newly announced baby.
So there you have it — proof that a gluten free diet can do wonders for your health — and appearance!
